Spicy Bean Fajitas

Ingredients (4 std servings)

2 x 400g tins of kidney beans

2 x peppers (whichever ones you fancy)

200g mushrooms

1 Large onion

5-10ml oil

1 jar hot salsa

1-2 tblsp chilli powder (up to you)

8 large wholemeal wraps*

1/2 head of iceberg lettuce to serve

1 medium avocado to serve .

Method

1. Dice the onions and chop the mushrooms thinly and fry on medium heat on a pan in a small amount of oil (5-10ml)

2. Chop the peppers and add them to onions and mushrooms after 5 mins. If pan dries up add drops of water, don’t add more oil.

3. While these are frying, chop your lettuce and avocado and set aside.

4. Drain and wash kidney beans and add them to the frying pan with the rest of the cooked ingredients.

5. Add salsa and spices to the pan and mix over medium heat.

6. Once thoroughly cooked and heated, serve with wraps and sides. Enjoy!
