Protein Pancakes

This recipe serves one or two, depends on your requirements. Serving sizes are individual-specific.
I’m going to just give the pancake ingredients and nutritional info, as the toppings are all up to you! But as a suggestion, I’d add nuts/seeds and fruit to up the fibre and overall nutritional quality of the meal 😉

Recipe
100g oat flour (oats blended)
1tsp chia/flaxseed
1 & 1/2 tsp baking powder
1 scoop protein (30g)
150ml soya (or any) milk
100ml water
Method
1.In a Blender blend the oats until they make a flour.
2.Add protein powder and liquid (water & plant-milk) to the oat flour and blend again until thick and smooth.
3. Add flaxseed and baking powder and gently stir until evenly mixed & mix looks light and fluffy (don’t blend as this will make mix too heavy).
4. On a high heat on a frying pan using a spray-oil or nothing if you’ve a reliable non-stick pan, add your pancake mix in round dollops. Spread gently, but don’t make too thin as these are meant to be thick pancakes (like in pic 2).
It takes approx 3 minutes for one side to cook (should be golden brown). Then flip with a spatula to the other side for another 3 mins (this may vary slightly). 5. Serve with your fav toppings!
