Chow Mein with Chicken-style soya chunks

Quick and easy Chow Mein for 4! 100% Vegan🌱 But not just for Vegans! Less than 500 kcals & 10g fat per serving. Roughly 25g protein too.
No oil used in this dish, I “fried” the soya-chunks and peppers on a pan with some water (no oil necessary), while I cooked the noodles separately in boiling water (as per packagining instructions).
Once everything was cooked (Peppers soft and soya chunk cooked) I threw in a tin of sweetcorn, and then the sauce and mixed it all over a low heat.
This dish was made in 10 minutes, so "not having enough time to cook healthy tasty meals" is not an excuse for anything other than laziness.
Easy, simple, quick, and tasty meal.
Chow Mein is lower in sugar than many other pre-made sauces, with 8.7 g per serving (1/2 a pack). Be careful when choosing sauces, aim to have sauces with no more than 10g per serving. Sweet and sour has 20g+ per serving! That’s a lot!
I’d have preferred some more vegetables in this dish, but made it with what I had. Feel free to throw in mushrooms and onions too for extra nutrition and flavour.
